Pancetta is a simple delicacy obtained from pork belly, it has been enjoyed since the time of the ancient Romans. It is believed that they discovered the process of salting and smoking fresh meat, extending its shelf life and creating new flavors. Due to slow drying and ripening, the texture of the meat is soft and moist with pleasant smell, typical for dried Istrian products.
